Garlic-Lemon Spinach Pie


Spinach pie may sound like a strange juxtaposition of ingredients if you’ve never had it before – “WHY would I fill a perfectly good pie crust with¬†spinach, of all things?!” But if you’ve ever had Greek spanikopita, you can probably appreciate just how wonderful spinach pie can be. This particular spinach pie is not that much like spanikopita. The crust is a regular pie crust instead of phyllo dough, and the spinach is seasoned differently. But I still think the outcome is delicious! My 4-year-old daughter even loved it!

My philosophy is that if there is a really delicious way to make myself want to eat A LOT of something as healthy as spinach, why not make it? And personally, I think the best way to make almost anything taste great is to put it inside a buttery, flaky pie crust!

Lemony Spinach Pie with Garlic

Garlic-Lemon Spinach Pie

1 deep-dish pie crust, top and bottom
2 oz cream cheese
1 1/3 cups onion
1 tbsp garlic
1 Tbsp olive oil
Zest of one lemon
2 tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
1/4 tsp red pepper flakes
1/8 tsp nutmeg
24 oz spinach, fresh or frozen
1 egg

Set out the cream cheese and cut in small pieces to warm to room temperature. Make the pie crust and refrigerate in plastic. Preheat the oven to 425 degrees.

Chop the onion and mince the garlic. Heat the olive oil over medium heat in a large skillet. Add the onions and garlic, and cook until soft, about 6 minutes. Meanwhile, zest and juice the lemon. If you are using frozen spinach, thaw in the microwave or in hot water and squeeze or wring out as much water as possible. Add zest and juice to the onions, as well as salt, pepper, red pepper flakes, and nutmeg. Add the spinach (in batches if fresh) and stir until wilted, about 4 minutes. Remove from heat

Roll out the bottom crust and place in pie pan. Fill with parchment paper and beans or pie weights. Bake for 10-12 minutes, until lightly browned.

Lightly beat egg in a small bowl. Add to spinach mixture with cream cheese and breadcrumbs. Stir together until the cream cheese is melted and everything is combined. Roll out the top crust. When the bottom crust is done, add the spinach mixture and cover with the top crust. Make a few slits to allow steam to escape. Bake for another 15 minutes or until browned. Serve with hot sauce if desired.
